Buffalo Chicken Sandwiches with Blue Cheese Slaw

Let's get something out of the way, this is not a food blog, it's a mom blog. I'm sure there will be lots of food posts. Let's face it, there's a lot of food (and drink) involved in the day to day. But this isn't a food blog. The pictures aren't food porn, they are taken with my point & shoot as I'm running plates to the table. The recipes are the kind of recipes you can count on after a busy day, a lazy day, or just one of those nights when everyone is screaming. So, now that you know what to expect, let's get on with it.






















You can throw these tasty bites together with things you most likely have on hand.
  • chicken, 2-3 breasts cooked & shredded. If you've planned ahead you can toss your chicken in the crock with some buffalo sauce or even chicken broth and cook on low 4-6 hours. If you're at the store wondering what the hell to make, grab a rotisserie chicken
  • 3 oz cream cheese, softened
  • your favorite buffalo wing sauce
  • package of cole slaw
  • your favorite blue cheese dressing
  • buns to make your sandwich
Add the softened cream cheese to your shredded chicken and stir. Now add your buffalo sauce, how much depends on your preference for heat and sauciness. Personally, I like it hot & saucy. Mix it all up until it's well combined; a fork works well for this part. In another bowl mix your cole slaw and the dressing. That's it. Seriously. Make your sandwich and enjoy.
